Thanksgiving1 If you’re anything like me and my family, you cook entirely too much on Thanksgiving. Turkey, ham, sweet potato casserole, green bean casserole, copious amounts of macaroni salad, pecan pie, and pumpkin pie are no strangers to my house around the most waistline-unfriendly holiday of the year. And that’s not even a comprehensive list.

My question for all our loyal readers is this: What do you do with your leftovers? In my house, turkey and ham sandwiches are a pretty big thing between Thanksgiving and the new year. Other side items will keep for maybe a week after Thanksgiving, but then they need to be disposed of, but meat can be frozen and saved for later occasions.

Maybe some of you all are more creative. Some ideas that pop into my head are giving away leftovers to charities, or donating it to your local soup kitchen or nursing home. Let us know your ideas!

We have about 20 family members to gather at our home. We do send some left overs home with those who come. A tradition we have is to cook the turkey carcas in water for over an hour and cool. After we debone it and add vegetables and rice to create a soup. We all look forward to the soup :)
